                                            HONEY OF UKRAINE

                        The monograph was performed on basis of obtained experimental data quality of
               beekeeping  products  in  the  laboratory  conditions  of  the  National  Scientific  Center
               “Institute of Beekeeping them. P. I. Prokopovicha “, using 1275 specimens of the bees'
               border, which came to the institute from the main suppliers of Ukrainian honey from
               different  regions  for  official  examination.  The  parameters  of  the  quality  of  honey
               produced in different regions of Ukraine are estimated: Western  – Volyn, Zakarpattia,
               Ivano-Frankivsk, Lviv, Rivne, Khmelnytsky, Chernivtsi regions; East – Donetsk, Luhansk,
               Kharkiv regions; Southern – Zaporozhye, Kirovograd, Nikolaev, Odessa, Kherson regions
               and  Crimea;  North  –  Zhytomyr,  Kiev,  Sumy,  Chernihiv  regions;  Central  –  Vinnitsa
               Dnipropetrovsk, Poltava, Cherkasy regions.
               According to the research objectives, 5 series of purposeful experiments were conducted.
               The selection of samples of honey of different beans of different botanical origin (acacia,
               linden,  buckwheat,  sunflower,  grass)  from  different  regions  of  Ukraine  and  the
               determination of the main indicators of honey quality were conducted in accordance with
               the requirements of DSTU 4497: 2005 “Honey is natural. Specifications” (determination
               of  mass  fraction  of  water,  diastase  number,  hydroxymethylfurfural  content,  electrical
               conductivity).
